Dairy-Free Lebanese Mujadara (Lentils and Rice)

Ingredients

  • 1 cup Brown or green lentils
  • 1 cup Basmati rice
  • 3 tbsp Olive oil
  • 2 large Onions
  • 3 cups Vegetable broth
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Crispy fried onions (optional garnish)

Instructions

  1. 1Rinse the lentils and rice separately.
  2. 2In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. 3Add thinly sliced onions and cook, stirring frequently, until deeply caramelized (about 20-25 minutes). Remove half of the onions and set aside for garnish.
  4. 4Add the lentils and rice to the pot with the remaining caramelized onions. Stir well.
  5. 5Pour in the vegetable broth, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the lentils and rice are cooked through and the liquid is absorbed.
  6. 6Fluff with a fork and serve hot, garnished with the reserved caramelized onions and optional crispy fried onions.
  7. 7Drizzle with the remaining 1 tbsp of olive oil.
