Dairy-Free Lamprais (Dutch Burgher Rice Packet)

A Sri Lankan rice packet consisting of rice cooked in stock, along with a mixed meat curry, seeni sambal, brinjal moju, and frikkadels, all wrapped in banana leaves and baked. This version is dairy-free and nut-free.

Ingredients

  • 2 cups Short-grain rice
  • 4 cups Chicken stock (dairy-free)
  • 0.5 lb Beef
  • 0.5 lb Chicken
  • 0.5 lb Pork
  • 2 large Onion
  • 6 cloves Garlic
  • 2 inch Ginger
  • 3 tbsp Curry powder
  • 1 tsp Turmeric powder
  • 2 Cinnamon stick
  • 15 Curry leaves
  • 1 cup Seeni Sambal (Onion Relish)
  • 1 cup Brinjal Moju (Pickled Eggplant)
  • 12 Frikkadels (Meatballs)
  • 4 Banana leaves
  • 4 tbsp Coconut oil

Instructions

  1. 1Cook the rice in chicken stock. Set aside.
  2. 2Prepare the mixed meat curry: Sauté onions, garlic, and ginger in coconut oil. Add beef, chicken, and pork. Add curry powder, turmeric powder, cinnamon stick, and curry leaves. Cook until meat is tender.
  3. 3Prepare Seeni Sambal and Brinjal Moju separately (ensure dairy-free and nut-free).
  4. 4Prepare Frikkadels (ensure dairy-free and nut-free).
  5. 5To assemble the lamprais: Lay a banana leaf on a flat surface. Place a portion of rice in the center. Top with a portion of the mixed meat curry, Seeni Sambal, Brinjal Moju, and 3 Frikkadels.
  6. 6Wrap the banana leaf tightly around the contents, forming a packet. Secure with kitchen twine if needed.
  7. 7Preheat oven to 350°F (175°C).
  8. 8Bake the lamprais packets for 60 minutes.
  9. 9Serve hot, unwrapping the banana leaf just before eating.
