Ingredients

  • 3 large Red onions
  • 2 tablespoons Coconut oil
  • 1 Cinnamon stick
  • 3 Cardamom pods
  • 3 Cloves
  • 3 tablespoons Coconut aminos
  • 1 tablespoon Stevia or Erythritol
  • 1 tablespoon Tamarind paste
  • 4 medium Zucchini
  • to taste Salt

Instructions

  1. 1Thinly slice the red onions.
  2. 2Heat coconut oil in a large pan over medium heat.
  3. 3Add sliced onions, cinnamon stick, cardamom pods, and cloves. Sauté until onions are softened and caramelized, about 20-25 minutes.
  4. 4Stir in coconut aminos, stevia (or erythritol), and tamarind paste. Cook for another 5 minutes.
