Ingredients

  • 2 medium Sweet potatoes (diced)
  • 1 medium Red bell pepper (diced)
  • 1/2 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons Olive oil
  • 4 large Eggs
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Green onions (sliced, for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add sweet potatoes, red bell pepper, and onion to the skillet and cook until tender, about 10-12 minutes.
  3. 3Add garlic and Cajun seasoning and cook for 1 minute more.
  4. 4Make four wells in the hash and crack an egg into each well.
  5. 5Cover the skillet and cook until the eggs are cooked to your liking, about 3-5 minutes for runny yolks.
  6. 6Season eggs with salt and pepper. Garnish with green onions.
