Dairy-Free Bhuteko Bhat (Fried Rice)

Ingredients

  • 4 cups Cooked Rice
  • 2 tbsp Vegetable Oil
  • 1/2 cup Onion
  • 2 cloves Garlic
  • 1/2 cup Carrots
  • 1/2 cup Peas
  • 2 tbsp Soy Sauce
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Cumin Powder
  • 1/4 cup Cilantro

Instructions

  1. 1Place a 12-inch skillet or wok over medium-high heat, which is about 375°F (190°C). Add the 2 tablespoons of vegetable oil and let it heat until it shimmers, about 1 minute.
  2. 2Add the 1/2 cup of onion and the 2 cloves of garlic to the hot oil. Cook, stirring constantly, until the onion is softened and the garlic smells fragrant, about 1 to 2 minutes.
  3. 3Add the 1/2 cup of carrots and the 1/2 cup of peas to the skillet. Continue to cook, stirring occasionally, for 3 to 4 minutes, until the vegetables are slightly tender.
  4. 4Add the 4 cups of cooked rice, 2 tablespoons of soy sauce, 1/4 teaspoon of turmeric powder, and 1/4 teaspoon of cumin powder to the skillet. Stir everything together well to coat the rice evenly.
  5. 5Stir-fry the rice mixture for 5 to 7 minutes. Keep stirring to prevent sticking. The rice is ready when it is heated all the way through and some grains start to look a little crispy.
  6. 6Remove the skillet from the heat. Stir in the 1/4 cup of chopped cilantro.
  7. 7Serve the Dairy-Free Bhuteko Bhat hot immediately.
