Dairy-Free and Egg-Free Ghanaian Rice Porridge (Breakfast)

A warm and comforting Ghanaian rice porridge, traditionally called 'Rice Water', made without dairy or eggs. This version uses coconut milk for creaminess and added flavor.

Ingredients

  • 1 cup Rice (long grain)
  • 4 cups Water
  • 1 can (13.5 oz) Coconut milk (full-fat)
  • 1 tablespoon Ginger (fresh, grated)
  • 1 teaspoon Vanilla extract
  • 2-3 tablespoons Sugar (or sweetener of choice)
  • 1/4 teaspoon Pinch of salt
  • 1/2 teaspoon Ground cinnamon

Instructions

  1. 1Rinse the rice under cold water until the water runs clear.
  2. 2In a medium saucepan, combine the rinsed rice, water, coconut milk, grated ginger, vanilla extract, and salt.
  3. 3Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is very soft and the porridge has thickened.
  4. 4Stir in the sugar (or sweetener) and cinnamon. Adjust to your taste.
  5. 5Serve hot. Garnish with extra cinnamon or a drizzle of coconut milk if desired.
