Cuban-Style Tofu Scramble with Yuca Fries

Ingredients

  • 1 block Firm Tofu
  • 1 large Yuca
  • 1/2 each Onion
  • 1/2 each Green Bell Pepper
  • 1 each Tomato
  • 3 cloves Garlic
  • 3 tablespoons Olive Oil
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Lime Juice

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 1 large yuca and cut it lengthwise into 1/2-inch thick strips, then cut the strips into fry shapes approximately 3-4 inches long. Place the yuca fries on a large baking sheet, then toss them with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.
  2. 2Bake the yuca fries for 30-40 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy.
  3. 3While the yuca bakes, prepare the 1 block of firm tofu by placing it between several layers of paper towels or a clean kitchen towel, then placing a heavy object (such as a cast-iron skillet or a few cans) on top for at least 15-20 minutes to press out excess water. Once pressed, crumble the 1 block of firm tofu into small, bite-sized pieces.
  4. 4Dice the 1/2 onion, the 1/2 green bell pepper, and the 1 tomato into 1/4-inch pieces. Mince the 3 cloves of garlic.
  5. 5Heat the remaining 2 tablespoons of olive oil in a large (10-12 inch) skillet over medium heat. Add the diced 1/2 onion and the diced 1/2 green bell pepper to the skillet and cook, stirring occasionally, for 5 minutes, or until the vegetables have softened.
  6. 6Add the minced 3 cloves of garlic and the diced 1 tomato to the skillet with the softened vegetables. Cook for 2 minutes, stirring constantly, until the garlic becomes fragrant.
  7. 7Add the crumbled 1 block of firm tofu to the skillet. Sprinkle in the 1 teaspoon of ground cumin, 1/2 teaspoon of turmeric powder, 1 teaspoon of oregano, the remaining 1/2 teaspoon of salt, and the remaining 1/4 teaspoon of black pepper. Stir all ingredients together thoroughly and cook for 8-10 minutes over medium heat, stirring occasionally, until the tofu is heated through and has a slightly browned appearance.
  8. 8Remove the skillet from the heat and stir in the 1 tablespoon of lime juice until well combined.
  9. 9Serve the Cuban-Style Tofu Scramble immediately alongside the crispy baked yuca fries.
