Ingredients

  • 1/2 cup White Rice
  • 4 cups Unsweetened Almond Milk
  • 1 can Coconut Milk
  • 1/2 cup Sugar
  • 1 Cinnamon Stick
  • 1 tsp Lemon Zest
  • 1 tsp Vanilla Extract
  • Ground Cinnamon

Instructions

  1. 1In a medium saucepan, combine the rice, almond milk, coconut milk, sugar, cinnamon stick, and lemon zest.
  2. 2Bring to a boil over medium heat, then reduce heat to low and simmer for 40-45 minutes, or until the rice is cooked and the pudding has thickened, stirring occasionally.
  3. 3Remove from heat and stir in the vanilla extract.
  4. 4Remove the cinnamon stick and lemon zest.
  5. 5Serve warm or cold, sprinkled with ground cinnamon.
