Ingredients

  • 2 lbs Yuca (cassava), peeled and cut into chunks
  • 6 cups Water
  • 6 cloves Garlic
  • 1/2 cup Sour orange juice (or equal parts orange and lime juice)
  • 1/4 cup Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions

  1. 1Place yuca chunks in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until yuca is tender.
  2. 2While yuca is cooking, prepare the mojo: In a small bowl, mince the garlic.
  3. 3In a separate saucepan, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes, or until fragrant (be careful not to burn the garlic).
  4. 4Remove from heat and stir in sour orange juice (or orange and lime juice). Season with salt and pepper to taste.
  5. 5Drain yuca and transfer to a serving dish.
  6. 6Pour mojo over the yuca. Serve hot as a side dish.
