Ingredients

  • about 450 g Crawfish Tails
  • 1/4 cup Gluten-Free All-Purpose Flour
  • 1/4 cup Vegetable Oil
  • 1 cup Onion (chopped)
  • 1/2 cup Bell Pepper (chopped)
  • 1/2 cup Celery (chopped)
  • 3 cloves Garlic (minced)
  • 2 tbsp Creole Seasoning
  • 1 cup Chicken Broth
  • 1/2 cup Heavy Cream
  • 1 tsp Hot Sauce
  • 2 tbsp Green Onions (chopped, for garnish)
  • 1 box Gluten-Free Crackers

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a large heavy-bottomed pot, heat the 1/4 cup of vegetable oil over medium heat (approximately 162.8-176.7°C / 160-175°C). Whisk in the 1/4 cup of gluten-free all-purpose flour to create a roux, then cook, stirring constantly, for 5-7 minutes until the roux achieves a light golden-brown color, similar to a copper penny.
  2. 2Add the 1 cup of 0.635 cm diced onion, 1/2 cup of 0.635 cm diced bell pepper, and 1/2 cup of 0.635 cm diced celery to the pot; cook for about 5 minutes, stirring occasionally, until the vegetables are tender and translucent. Stir in the 3 cloves of minced garlic and cook for 1 minute more, until fragrant.
  3. 3Stir in the 2 tablespoons of Creole seasoning and cook for 1 minute to toast the spices and release their aroma. Gradually whisk in the 1 cup of chicken broth, ensuring no lumps remain, and bring the mixture to a gentle simmer where small bubbles just begin to break the surface.
  4. 4Add the about 450 g of crawfish tails and the 1 teaspoon of hot sauce to the simmering mixture. Continue to simmer for 15-20 minutes, stirring occasionally, until the sauce has visibly thickened and coats the back of a spoon; ensure the crawfish tails are heated through to an internal temperature of 63°C.
  5. 5Remove the pot from the heat and stir in the 1/2 cup of heavy cream. Heat gently for 2-3 minutes, stirring constantly, until the dip is hot and creamy, but do not allow it to come to a boil.
  6. 6Garnish the hot dip with the 2 tablespoons of thinly sliced green onions and serve immediately with the 1 box of gluten-free crackers.
