Crawfish Boil (Soy-Free)

A traditional crawfish boil without soy. Note this recipe serves a large party so is readily halved. Use caution to check ingredient labels for Cajun seasoning.

Ingredients

  • 10 lbs Live Crawfish
  • 10 gallons Water
  • 1 package Crawfish Boil Seasoning (soy-free)
  • 6 lemons Lemons (halved)
  • 4 onions Onions (halved)
  • 2 heads Garlic (whole heads, halved)
  • 5 lbs Potatoes (small, red)
  • 6 ears Corn on the Cob (halved)
  • 2 lbs Andouille Sausage (soy-free, optional)

Instructions

  1. 1In a large crawfish pot, bring water to a rolling boil.
  2. 2Add crawfish boil seasoning, lemons, onions, and garlic to the boiling water.
  3. 3Add potatoes and cook for 15 minutes.
  4. 4Add corn on the cob and andouille sausage (if using) and cook for 10 minutes.
  5. 5Add live crawfish to the pot and cook for 8-10 minutes, or until crawfish are bright red.
  6. 6Turn off the heat and let the crawfish soak in the seasoned water for 15-20 minutes to absorb the flavors.
  7. 7Drain the crawfish and serve immediately on a large table covered with newspaper.
