Coconut Rice Pancakes with Banana

Ingredients

  • 1 cup Rice Flour
  • 1 cup Coconut Milk
  • 1 large Egg
  • 2 tablespoons Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 medium Banana
  • 1/4 cup Coconut Syrup

Instructions

  1. 1In a large bowl, add the 1 cup of Rice Flour, 2 tablespoons of Sugar, 1 teaspoon of Baking Powder, and 1/4 teaspoon of Salt. Whisk these dry ingredients together until they are evenly combined.
  2. 2In a separate medium bowl, whisk together the 1 cup of Coconut Milk and the 1 large Egg until well blended. Pour this wet mixture into the bowl with the dry ingredients. Stir gently until everything is just combined; do not overmix.
  3. 3Heat a lightly oiled griddle or large skillet over medium heat, to approximately 350°F (175°C).
  4. 4For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook for 2 to 3 minutes on the first side, until bubbles start to form on the surface and the edges look set. Flip carefully and cook for another 2 to 3 minutes on the second side, until golden brown and cooked through.
  5. 5While the pancakes are cooking, slice the 2 medium Bananas into rounds about 1/4-inch thick.
  6. 6Arrange the cooked pancakes on serving plates. Top with the sliced Bananas and finish with a drizzle of the 1/4 cup of Coconut Syrup.
