Burmese Tofu Curry with Coconut Rice

Ingredients

  • 1 block Firm Tofu
  • 1 can Coconut Milk
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Turmeric Powder
  • 1/2 tsp Chili Powder
  • 1/2 cup Vegetable Broth
  • 1 tbsp Lime Juice
  • 1/4 cup Cilantro
  • 1 cup Jasmine Rice
  • 1/4 cup Coconut Flakes

Instructions

  1. 1Place the 1 block of Firm Tofu on a clean kitchen towel or paper towels. Cover with another towel and place a heavy object on top to press out excess water for at least 10 minutes. Once pressed, cut the tofu into 1-inch cubes.
  2. 2Combine the 1 cup of Jasmine Rice and the 1/4 cup of Coconut Flakes in a medium saucepan with 2 cups of water. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  3. 3While the rice cooks, prepare the curry base. Finely chop the 1 medium Onion, mince the 3 cloves Garlic, and grate or mince the 1 inch Ginger.
