Ingredients

  • 1 lb Firm Tofu
  • 2 cups Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1 tsp Turmeric Powder
  • 1/4 tsp Chili Powder
  • 2 tbsp Soy Sauce
  • 2 tbsp Vegetable Oil
  • 1/2 tsp Salt
  • 4 cups Cooked Rice

Instructions

  1. 1Press the tofu to remove excess water, then cut it into cubes.
  2. 2Heat vegetable oil in a pot over medium heat.
  3. 3Add chopped onion, minced garlic, and grated ginger and sauté until softened.
  4. 4Stir in turmeric powder and chili powder. Cook for 1 minute.
  5. 5Add diced tomatoes and cook until they break down.
  6. 6Add soy sauce. Bring to a simmer.
  7. 7Gently add the tofu pieces to the sauce. Cover and simmer for 10-15 minutes, or until the tofu is heated through.
  8. 8Season with salt to taste. Serve hot over cooked rice.
