Broeder (Dutch Steamed Pudding Bread)

A traditional Dutch sweet bread, steamed to perfection. This recipe is modified to be soy-free.

Ingredients

  • 3 cups All-purpose flour
  • 2 1/4 tsp Active dry yeast
  • 1/4 cup Sugar
  • 1 tsp Salt
  • 1 cup Milk
  • 1/4 cup Melted butter
  • 2 large Eggs
  • 1/2 cup Raisins
  • 1/2 cup Currants

Instructions

  1. 1In a large bowl, combine flour, yeast, sugar, and salt.
  2. 2In a saucepan, heat milk and butter until warm (not hot).
  3. 3Add the warm milk mixture to the dry ingredients, along with the eggs. Mix until a shaggy dough forms.
  4. 4Knead the dough on a lightly floured surface for 5-7 minutes, or until smooth and elastic.
  5. 5Stir in the raisins and currants.
  6. 6Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  7. 7Punch down the dough and shape it into a round loaf.
  8. 8Place the loaf in a greased and floured pudding mold or heat-safe bowl.
  9. 9Cover and let rise for another 30 minutes.
  10. 10Place the mold in a large pot with enough boiling water to come halfway up the sides of the mold. Cover the pot tightly.
  11. 11Steam for 90 minutes, or until a toothpick inserted into the center comes out clean.
  12. 12Let cool slightly before removing from the mold. Slice and serve warm.
