Ingredients

  • about 450 g Kale
  • about 910 g Potatoes
  • about 450 g Smoked Sausage
  • 1 medium Onion
  • 4 cups Vegetable Broth
  • 1 tablespoon Dijon Mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Wash the about 450 g of kale, remove the tough stems, and chop the leaves into roughly 2.54 cm pieces.
  2. 2Peel the about 910 g of potatoes and cut them into 2.54 cm cubes.
  3. 3Slice the about 450 g of smoked sausage into 1.27 cm thick rounds.
  4. 4Peel and finely chop the 1 medium onion.
  5. 5In a large heavy-bottomed pot or Dutch oven, combine the chopped kale, cubed potatoes, chopped onion, and 4 cups of vegetable broth. Add the 1/2 teaspoon of salt. Bring the mixture to a boil over high heat, then reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the potatoes are starting to soften.
  6. 6Add the sliced smoked sausage to the pot. Cover and continue to simmer for another 15-20 minutes, or until the potatoes are fork-tender and the sausage is heated through. The internal temperature of the sausage should reach 74°C.
  7. 7Remove the pot from the heat. Stir in the 1 tablespoon of Dijon mustard. Taste the stew and add the 1/4 teaspoon of black pepper, or more if desired. Serve the Boerenkool met Worst hot.
