Ingredients

  • 1 cup Couscous
  • 1 cup Boiling Water
  • 2 tbsp Coconut Oil
  • 1/4 cup Sugar
  • 1/2 cup Roasted Peanuts
  • 1/4 cup Raisins
  • 1/4 tsp Cinnamon

Instructions

  1. 1Place the 1 cup of couscous into a heatproof bowl. Pour the 1 cup of boiling water over the couscous, then immediately cover the bowl tightly. Let the couscous stand undisturbed for 5 minutes to absorb the water.
  2. 2After 5 minutes, uncover the bowl and use a fork to gently fluff the cooked couscous, separating the grains.
  3. 3Place a medium skillet (e.g., 10-inch or 25 cm) over medium heat (approximately 300-325°F or 150-165°C). Add the 2 tablespoons of coconut oil to the skillet and allow it to melt completely, which should take about 1-2 minutes.
  4. 4Add the fluffed 1 cup of couscous, 1/4 cup of sugar, 1/2 cup of roasted peanuts, 1/4 cup of raisins, and 1/4 teaspoon of cinnamon to the skillet with the melted coconut oil.
  5. 5Continue cooking over medium heat, stirring constantly with a spoon or spatula, for 4-6 minutes. Cook until the 1/4 cup of sugar has completely dissolved and the couscous mixture is thoroughly heated through and fragrant.
  6. 6Remove the skillet from the heat and serve the Bassie Salté warm.
