Bassie Salté (Sweetened Millet Porridge)

A warm and comforting millet porridge, sweetened and spiced. This dairy-free version uses coconut milk.

Ingredients

  • 1/2 cup Millet Flour
  • 3 cups Water
  • 1 cup Coconut Milk
  • 1/4 cup Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

Instructions

  1. 1In a medium bowl, whisk together the 1/2 cup Millet Flour with 1/2 cup of the Water until you have a smooth, thick paste with no lumps.
  2. 2In a large, heavy-bottomed saucepan, bring the remaining 2 1/2 cups of Water to a rolling boil over high heat. This should take about 5-7 minutes.
  3. 3While whisking the boiling water constantly with a spoon or whisk, slowly pour in the millet flour paste. Continue whisking for 1-2 minutes until the mixture is smooth and slightly thickened.
  4. 4Reduce the heat to low, cover the saucepan, and let the porridge simmer for 25-30 minutes. Stir it every 5-7 minutes to prevent sticking. The porridge is ready when it has thickened considerably and has a creamy consistency.
  5. 5Uncover the saucepan and stir in the 1 cup Coconut Milk, 1/4 cup Sugar, 1/2 tsp Cinnamon, and 1/4 tsp Nutmeg. Stir until everything is well combined.
  6. 6Continue to cook the porridge over low heat for another 5 minutes, stirring constantly. The porridge will become even creamier and the flavors will meld. It is done when it is heated through and has a smooth, flowing texture.
  7. 7Serve the Bassie Salté warm immediately.
