Ingredients

  • 8 pieces Chicken pieces (drumsticks, thighs)
  • 4 tablespoons Galangal, grated
  • 2 tablespoons Turmeric, grated
  • 4 cloves Garlic, minced
  • 6 pieces Shallots, minced
  • 3 pieces Candlenuts
  • 1 tablespoon Coriander powder
  • 2 teaspoons Salt
  • 1 teaspoon Sugar
  • 1 cup Water
  • 2 cups Vegetable oil

Instructions

  1. 1Grind or blend galangal, turmeric, garlic, shallots, candlenuts, coriander, salt, and sugar into a smooth paste.
  2. 2Marinate the chicken pieces with the spice paste and water for at least 30 minutes, or up to overnight in the refrigerator.
  3. 3Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. 4Carefully add the marinated chicken pieces to the hot oil, ensuring not to overcrowd the pan.
  5. 5Fry the chicken until golden brown and cooked through, about 6-8 minutes per side.
  6. 6Remove the chicken from the oil and drain on paper towels.
  7. 7Serve hot with rice and your favorite Indonesian side dishes.
