Asida Boufriwa (Nutty Porridge)

Ingredients

  • 1 cup Semolina Flour
  • 3 cups Water
  • 2 tablespoons Butter
  • 1/4 cup Honey
  • 1/2 cup Mixed Nuts (almonds, walnuts, pistachios)
  • 1 teaspoon Orange Blossom Water

Instructions

  1. 1In a medium saucepan, bring the 3 cups of water to a rolling boil over high heat, about 5-7 minutes.
  2. 2Reduce the heat to medium-low. While whisking constantly with a whisk, slowly add the 1 cup of semolina flour to the boiling water. Continue whisking for 1-2 minutes until the mixture is smooth and no lumps remain. The mixture will start to thicken.
  3. 3Cook the porridge over low heat, stirring constantly with a wooden spoon, for 15-20 minutes. The porridge should become very thick, pulling away from the sides of the saucepan. It will have a smooth, creamy texture.
  4. 4Remove the saucepan from the heat. Stir in the 2 tablespoons of butter and the 1/4 cup of honey until they are completely melted and incorporated into the porridge.
  5. 5Stir in the 1 teaspoon of orange blossom water until it is evenly distributed throughout the porridge.
  6. 6Divide the porridge into 4 serving bowls. Top each bowl with a generous amount of the 1/2 cup of mixed nuts. Serve the Asida Boufriwa warm.
