Aloo Palak (Spinach and Potato Curry)

Ingredients

  • 1 lb Potatoes
  • 10 oz Spinach
  • 1 medium Onion
  • 1 tablespoon Ginger
  • 2 cloves Garlic
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Lemon juice

Instructions

  1. 1Place a large heavy-bottomed pot over medium heat (350°F / 175°C). Add the 2 tablespoons of vegetable oil.
  2. 2Add the 1 medium onion, chopped into small pieces, to the hot oil. Sauté for 5-7 minutes, stirring occasionally, until the onion pieces are golden brown.
  3. 3Add the 2 cloves of garlic, minced, and the 1 tablespoon of ginger, minced. Sauté for 1 minute until fragrant.
  4. 4Add the 0.5 teaspoon of turmeric powder, 1 teaspoon of cumin powder, and 1 teaspoon of coriander powder. Stir constantly for 1 minute until the spices are fragrant.
  5. 5Add the 1 lb of potatoes, cut into 1-inch cubes, to the pot. Stir to coat the potatoes with the spices. Cover the pot and cook for 10 minutes, stirring halfway through, until the potatoes are slightly softened.
  6. 6Add the 10 oz of spinach and the 0.5 teaspoon of garam masala to the pot. Stir everything together. Cover the pot and cook for 5-7 minutes, or until the spinach has wilted and the potatoes are tender when pierced with a fork.
  7. 7Remove the pot from the heat. Stir in the 1 tablespoon of lemon juice. Serve hot.
