Ingredients

  • 2 lb Fresh Tomatoes
  • 6 cups Chicken Broth
  • 1 medium Carrot
  • 1 medium Parsley Root
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 leaf Bay Leaf
  • 3 berries Allspice
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 4 tablespoons Sour Cream (Dairy)

Instructions

  1. 1Blanch the tomatoes in boiling water for 30 seconds, then peel and chop them.
  2. 2Peel and dice the carrot, parsley root, and onion. Mince the garlic.
  3. 3In a large pot, combine the chicken broth, chopped tomatoes, diced carrot, diced parsley root, diced onion, and minced garlic.
  4. 4Add the bay leaf and allspice berries.
  5. 5Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the vegetables are tender.
  6. 6Remove the bay leaf and allspice berries.
  7. 7Stir in the sugar, salt, and pepper.
  8. 8Serve hot, topped with a dollop of sour cream.
