Ingredients

  • 1.5 lbs Veal tenderloin, thinly sliced
  • 2 tbsp All-purpose flour
  • 3 tbsp Butter
  • 2 medium Shallots, finely chopped
  • 8 oz Cremini mushrooms, sliced
  • 1/2 cup Dry white wine (e.g., Sauvignon Blanc)
  • 1 cup Heavy cream
  • 1 tsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 4 servings Rösti (Swiss potato pancakes)

Instructions

  1. 1In a medium bowl, place the 1.5 lbs Veal tenderloin slices and sprinkle with the 2 tbsp All-purpose flour. Toss gently to coat each slice evenly, then shake off any excess flour.
  2. 2Place a large skillet over medium-high heat (400°F / 200°C). Add 2 tbsp of the 3 tbsp Butter. Once the butter has melted and is shimmering, carefully add the floured veal slices in a single layer. Cook in batches if necessary to avoid overcrowding the skillet, for about 2-3 minutes per batch, until browned on all sides. Use tongs to remove the browned veal from the skillet and set it aside on a clean plate.
  3. 3Reduce the skillet heat to medium (350°F / 175°C). Add the remaining 1 tbsp of the 3 tbsp Butter to the same skillet. Once melted, add the 2 medium Shallots, finely chopped, and cook, stirring occasionally, until they are softened and translucent, about 3-4 minutes. Add the 8 oz Cremini mushrooms, sliced, and cook, stirring occasionally, until they have released their liquid and are lightly browned, about 5-7 minutes.
  4. 4Pour the 1/2 cup Dry white wine into the skillet. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Let the wine bubble and reduce slightly, which should take about 2 minutes.
  5. 5Pour in the 1 cup Heavy cream. Stir everything together and bring the sauce to a gentle simmer. Lower the heat to low (200°F / 95°C) and let the sauce thicken slightly, which will take about 5 minutes. Stir occasionally to prevent sticking.
  6. 6Return the cooked veal slices to the skillet with the sauce. Stir gently to coat the veal in the sauce. Let the veal heat through in the sauce for 1-2 minutes. Stir in the 1 tsp Lemon juice, 2 tbsp Fresh parsley, chopped, 1/2 tsp Salt, and 1/4 tsp Black pepper.
  7. 7Serve the Zürcher Geschnetzeltes immediately over the 4 servings Rösti. Garnish with extra chopped parsley if desired.
