Zürcher Geschnetzeltes (Sliced Veal in Cream Sauce)

Ingredients

  • 1.5 lbs Veal tenderloin, thinly sliced
  • 8 oz Cremini mushrooms, sliced
  • 2 medium Shallots, minced
  • 1/2 cup Dry white wine
  • 1 cup Heavy cream
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Lemon juice
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 4 servings Gluten-free Rösti

Instructions

  1. 1Prepare the 4 servings of Gluten-free Rösti and keep them warm while you prepare the Zürcher Geschnetzeltes.
  2. 2Place a large skillet over medium-high heat, approximately 375°F (190°C). Add the 2 tablespoons of butter and the 1 tablespoon of olive oil to the skillet and allow them to melt and shimmer. Add the 1.5 lbs of Veal tenderloin, thinly sliced, to the hot skillet and sauté for 5 to 7 minutes, turning occasionally, until the veal is evenly browned on all sides and cooked through. Remove the browned veal from the skillet and transfer it to a clean plate; set aside.
  3. 3Using the same large skillet, reduce the heat to medium, approximately 350°F (175°C). Add the 2 medium Shallots, minced, and sauté for about 3 minutes, stirring frequently, until they become soft and translucent. Then, add the 8 oz of Cremini mushrooms, sliced, to the skillet and continue to cook for about 5 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.
  4. 4Pour the 1/2 cup of Dry white wine into the skillet. Increase the heat to medium-high, approximately 375°F (190°C), and use a wooden spoon to scrape the bottom of the pan, loosening any browned bits. Allow the wine to simmer vigorously and reduce in volume by about half, which should take approximately 2 minutes.
  5. 5Stir in the 1 cup of Heavy cream. Bring the mixture to a gentle simmer over medium heat, approximately 350°F (175°C). Once simmering, reduce the heat to medium-low, approximately 300°F (150°C), and let the sauce simmer for 5 minutes, stirring occasionally, until it has slightly thickened and coats the back of a spoon.
  6. 6Return the reserved 1.5 lbs of Veal tenderloin, thinly sliced, to the skillet with the sauce. Gently stir to coat the veal, allowing it to heat through for 2 to 3 minutes over medium-low heat, approximately 300°F (150°C). Ensure the sauce does not boil vigorously during this step.
  7. 7Remove the skillet from the heat. Stir in the 2 tablespoons of Fresh parsley, chopped, and the 1 teaspoon of Lemon juice. Season the sauce with the 1/2 teaspoon of Salt and the 1/4 teaspoon of Black pepper. Stir well to combine.
  8. 8Serve the Zürcher Geschnetzeltes immediately over the prepared 4 servings of Gluten-free Rösti.
