Zürcher Geschnetzeltes Skewers (Gluten-Free)

Ingredients

  • 1 lb Veal cutlets, thinly sliced
  • 8 oz Cremini Mushrooms, sliced
  • 1 medium Shallot, finely chopped
  • 1/2 cup Dry White Wine
  • 1/2 cup Heavy Cream
  • 1 tablespoon Gluten-Free All-Purpose Flour
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley, chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1In a medium bowl, combine the 1 lb thinly sliced veal cutlets with the 1 tablespoon gluten-free all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss gently until the veal is evenly coated on all sides.
  2. 2Heat the 2 tablespoons olive oil in a large 12-inch skillet over medium-high heat, reaching approximately 400°F (200°C). Add the coated veal slices to the skillet in a single layer, ensuring not to overcrowd the pan; cook in batches if necessary. Cook each batch for 2-3 minutes per side until the veal is browned. Remove the browned veal from the skillet and set it aside on a plate.
  3. 3Add the 8 oz sliced cremini mushrooms and the 1 medium finely chopped shallot to the same skillet. Sauté over medium heat, approximately 300°F (150°C), for 5 minutes, or until the mushrooms are tender and the shallot is softened and translucent.
  4. 4Pour the 1/2 cup dry white wine into the skillet. Increase the heat to medium-high, about 350°F (175°C), and bring the wine to a simmer. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Let the wine simmer for 1 minute.
  5. 5Reduce the heat to medium-low, approximately 250°F (120°C). Stir in the 1/2 cup heavy cream. Return all of the browned veal to the skillet with the mushrooms and shallot. Stir everything together gently and allow the mixture to simmer gently for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and coats the back of a spoon. The veal should be cooked through, reaching an internal temperature of 145°F (63°C).
  6. 6Carefully thread the cooked veal and mushroom pieces onto skewers, alternating between them. This recipe should yield approximately 8-12 skewers.
  7. 7Garnish the skewers with the 2 tablespoons chopped fresh parsley and serve immediately.
