Ingredients

  • 2 large Yucca
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 cup Vegan mayonnaise
  • 2 cloves Garlic, minced
  • 1 tbsp Lemon juice
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2Peel the yucca and cut it into fries.
  3. 3In a bowl, toss the yucca fries with olive oil, paprika, garlic powder, salt, and pepper.
  4. 4Spread the yucca fries in a single layer on the baking sheet.
  5. 5Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. 6Prepare the dairy-free aioli: In a small bowl, whisk together vegan mayonnaise, garlic, lemon juice, salt, and pepper.
