Yuca Fries with Mojo Sauce

Ingredients

  • 2 lb Yuca
  • 3 cups Vegetable oil
  • 0.25 cup Olive oil
  • 6 cloves Garlic
  • 0.25 cup Lime juice
  • 0.25 cup Orange juice
  • 1 tsp Oregano
  • 0.5 tsp Cumin
  • 1 tsp Salt

Instructions

  1. 1Peel yuca and cut into 3-inch long fries.
  2. 2Boil yuca fries in salted water until tender, about 15-20 minutes. Drain well.
  3. 3Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. 4Fry yuca fries in batches until golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels and sprinkle with salt.
  5. 5While yuca fries are frying, prepare the mojo sauce: Heat olive oil in a small saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute.
  6. 6Stir in lime juice, orange juice, oregano, cumin, and salt. Bring to a simmer and cook for 2-3 minutes.
  7. 7Serve yuca fries hot with mojo sauce.
