Yuca con Mojo (Yuca with Garlic Sauce)

Ingredients

  • 2 lbs Yuca
  • 6 cups Water
  • 1 tsp Salt
  • 1/2 cup Olive oil
  • 6 cloves Garlic
  • 1/4 cup Lime juice
  • 2 tbsp Orange juice
  • 1 tsp Oregano

Instructions

  1. 1Peel the yuca and cut it into 2-inch pieces.
  2. 2Place the yuca in a large pot and add water and salt. Bring to a boil, then reduce heat to medium and cook for 20-25 minutes, or until the yuca is tender.
  3. 3While the yuca is cooking, prepare the mojo sauce. Heat olive oil in a small saucepan over medium heat.
  4. 4Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  5. 5Remove the saucepan from the heat and stir in lime juice, orange juice, and oregano.
  6. 6Drain the cooked yuca and arrange it on a serving platter.
  7. 7Pour the mojo sauce over the yuca and serve hot.
