Yuca con Mojo (Yuca with Garlic Sauce)

Ingredients

  • 1 large Yuca
  • 6 cups Water
  • 1 teaspoon Salt
  • 8 cloves Garlic
  • 1/4 cup Sour Orange Juice (or Lime Juice)
  • 3 tablespoons Olive Oil
  • 1/4 cup Onion
  • 2 tablespoons Cilantro

Instructions

  1. 1Peel the yuca and cut it into large chunks.
  2. 2Place the yuca in a large pot and cover with water. Add salt.
  3. 3Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the yuca is tender.
  4. 4While the yuca is cooking, prepare the mojo: Mince the garlic, onion and cilantro. Combine with sour orange juice (or lime juice), and olive oil in a bowl.
  5. 5Drain the yuca and transfer it to a serving dish.
  6. 6Pour the mojo over the yuca and serve hot.
