Yuca con Mojo (Yuca with Garlic Sauce)

Ingredients

  • 2 lbs Yuca
  • 6 cups Water
  • 0.5 cup Olive oil
  • 6 cloves Garlic
  • 0.25 cup Lime juice
  • 0.25 cup Orange juice
  • 1 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Peel the 2 lbs of Yuca and cut it into 2-inch pieces. Place the yuca pieces into a large heavy-bottomed pot. Add the 6 cups of Water to the pot.
  2. 2Bring the water in the pot to a boil over high heat. Once boiling, reduce the heat to medium and cook for 20-25 minutes, or until the yuca is tender when pierced with a fork. While the yuca cooks, prepare the mojo sauce.
  3. 3Heat the 0.5 cup of Olive oil in a small saucepan over medium heat (350°F / 175°C). Add the 6 cloves of Garlic, minced, and cook until fragrant, about 1 minute. Be careful not to burn the garlic, which will make it bitter.
  4. 4Remove the saucepan from the heat. Stir in the 0.25 cup of Lime juice, the 0.25 cup of Orange juice, the 1 tsp of Salt, and the 0.25 tsp of Black pepper until well combined.
  5. 5Carefully drain all the water from the pot containing the yuca. Transfer the cooked yuca to a serving dish.
  6. 6Pour the prepared mojo sauce evenly over the yuca in the serving dish.
  7. 7Serve the Yuca con Mojo hot.
