Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk (dairy or plant-based)
  • 3 tablespoons Aquafaba (chickpea brine)
  • 1/2 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 2 medium Onions
  • 2 cups Vegetable broth
  • 1 tablespoon Cornstarch
  • 1 teaspoon Soy sauce (optional)
  • 1/2 teaspoon Thyme

Instructions

  1. 1Preheat your oven to 425°F (220°C). Add the 2 tablespoons of vegetable oil to a 12-cup muffin tin, distributing it evenly into each cup, then place the muffin tin in the preheated oven to heat the oil for at least 5 minutes.
  2. 2In a medium bowl, whisk together the 1 cup of all-purpose flour, 1 cup of milk, 3 tablespoons of aquafaba, and 1/2 teaspoon of salt until the batter is completely smooth and free of any lumps.
  3. 3Carefully remove the hot muffin tin with the heated oil from the oven using oven mitts. Immediately and carefully pour the prepared batter into each hot muffin cup, filling each about two-thirds full, then return the muffin tin to the preheated oven and bake at 425°F (220°C) for 20-25 minutes, or until the puddings are significantly puffed up, golden brown, and crisp on the edges.
  4. 4While the Yorkshire puddings are baking, peel and thinly slice the 2 medium onions. Heat a medium saucepan or skillet over medium heat, then add the sliced onions and sauté them for 10-15 minutes, stirring occasionally, until they are very soft, translucent, and deeply caramelized to a rich golden-brown color.
  5. 5To the caramelized onions in the saucepan, add the 2 cups of vegetable broth and the 1/2 teaspoon of thyme, then bring the mixture to a simmer over medium-high heat and let it cook for 10 minutes, allowing the flavors to meld. In a small separate bowl, whisk the 1 tablespoon of cornstarch with 2 tablespoons of cold water until a smooth slurry forms, then pour the cornstarch slurry into the simmering gravy, stirring constantly, and continue to cook for 1-2 minutes until the gravy has visibly thickened; if desired, stir in the 1 teaspoon of soy sauce for an extra savory depth.
