Xôi Ngọt (Sweet Sticky Rice)

Ingredients

  • 2 cups Sweet sticky rice (glutinous rice)
  • 1 can (13.5 oz) Coconut milk
  • 1/2 cup Sugar
  • 1/4 teaspoon Salt
  • 2 leaves Pandan leaf (optional)

Instructions

  1. 1Rinse the sticky rice and soak it in water for at least 4 hours, or overnight.
  2. 2Drain the rice and place it in a steamer lined with cheesecloth.
  3. 3Add coconut milk, sugar, salt, and pandan leaf (if using) to a saucepan. Heat over low heat until sugar is dissolved.
  4. 4Steam the rice for 30-40 minutes, or until it is cooked through and sticky. Stir occasionally.
  5. 5Pour the coconut milk mixture over the rice and steam for another 5-10 minutes, or until the liquid is absorbed.
  6. 6Serve warm.
