Xôi Ngọt (Sweet Sticky Rice)

A classic Vietnamese sweet sticky rice dish, often served with mung bean paste and topped with coconut flakes.

Ingredients

  • 2 cups Sweet glutinous rice
  • 1/2 cup Mung bean paste
  • 1 cup Coconut milk
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 2 tbsp Shredded coconut

Instructions

  1. 1Rinse glutinous rice and soak in water for at least 4 hours or overnight.
  2. 2Drain the rice and steam for 30-40 minutes or until cooked through.
  3. 3While the rice is steaming, mix coconut milk, sugar, and salt in a saucepan and heat until the sugar dissolves.
  4. 4Pour the coconut milk mixture over the cooked rice and stir well.
  5. 5Steam for another 10-15 minutes.
  6. 6Serve warm, topped with mung bean paste and shredded coconut.
