Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Maple syrup
  • 1/4 cup Vegetable oil
  • 1/2 cup Unsweetened applesauce
  • 1 cup Wild blueberries

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a large bowl, whisk together the 2 cups of all-purpose flour, the 2 teaspoons of baking powder, and the 0.5 teaspoon of salt until well combined.
  3. 3Add the 2 tablespoons of maple syrup, the 1/4 cup of vegetable oil, and the 1/2 cup of unsweetened applesauce to the dry ingredients. Mix gently with a spoon or spatula until just combined and no dry streaks of flour remain.
  4. 4Gently fold in the 1 cup of wild blueberries until they are evenly distributed throughout the dough.
  5. 5Line a baking sheet with parchment paper. Using a spoon, drop rounded spoonfuls of the dough onto the prepared baking sheet, leaving about 1 inch of space between each piece.
  6. 6Bake the bannock bites in the preheated 375°F (190°C) oven for 18 to 20 minutes, or until they are golden brown on the edges and tops, and feel firm to the touch.
