Ingredients

  • 1 cup Whitebait (small fish)
  • 2 tablespoons Tapioca starch
  • 2 tablespoons Spring onions, finely chopped
  • 1 teaspoon Lemon juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Vegetable oil

Instructions

  1. 1In a bowl, combine the whitebait, tapioca starch, spring onions, lemon juice, salt, and pepper.
  2. 2Mix well until all ingredients are evenly distributed.
  3. 3Heat the vegetable oil in a large skillet over medium heat.
  4. 4Drop spoonfuls of the whitebait mixture into the hot oil, flattening them slightly.
  5. 5Cook for 3-4 minutes per side, or until golden brown and crispy.
  6. 6Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  7. 7Serve warm with a squeeze of lemon juice.
