Ingredients

  • 250 g Whitebait (Inanga), fresh
  • 1/4 cup Rice Flour
  • 1 Egg
  • 2 tbsp Fresh Parsley, chopped
  • 1 tbsp Fresh Chives, chopped
  • 1 tbsp Lemon Juice
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil, for frying

Instructions

  1. 1In a bowl, gently combine the whitebait, rice flour, egg, parsley, chives, lemon juice, salt, and pepper.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Drop spoonfuls of the whitebait mixture into the hot oil, flattening slightly.
  4. 4Cook for 2-3 minutes per side, or until golden brown and crispy.
  5. 5Serve immediately with extra lemon wedges, if desired.
