Ingredients

  • 2 cups Rice (long-grain)
  • 1 cup Black-eyed peas
  • 4 large Waakye leaves (dried)
  • 1 teaspoon Baking soda
  • 5 cups Water
  • 2 ripe Avocados
  • 1/2 medium Onion
  • 2 medium Tomatoes
  • 1/2 medium Green bell pepper
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Soak black-eyed peas in water for at least 4 hours or overnight.
  2. 2Rinse the rice and soaked black-eyed peas.
  3. 3In a large pot, combine rice, black-eyed peas, waakye leaves, baking soda, and water.
  4. 4Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the rice and beans are cooked through and the liquid is absorbed.
  5. 5While the waakye is cooking, prepare the avocado salad. Dice avocados, onion, tomatoes, and green bell pepper.
  6. 6In a bowl, combine diced ingredients, lime juice, salt, and black pepper. Mix gently.
  7. 7Serve the waakye hot with the avocado salad.
