Ingredients

  • 2 cups Rice
  • 1 cup Black-Eyed Peas
  • 6-8 leaves Waakye Leaves
  • 4 cups Water
  • 2 tbsp Vegetable Oil
  • 1 medium Onion
  • 1 tsp Salt

Instructions

  1. 1Rinse the soaked black-eyed peas and rice.
  2. 2In a large pot, heat the vegetable oil. Add the diced onion and sauté until translucent.
  3. 3Add the rice, black-eyed peas, waakye leaves, salt, and water.
  4. 4Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the rice and beans are cooked through and the water is absorbed.
  5. 5Remove the waakye leaves before serving. Serve warm with your choice of sides (e.g., shito, kelewele, fried plantain).
