Ingredients

  • 2 lbs Pork Belly
  • 4 cups Coconut Water
  • 1/4 cup Fish Sauce
  • 3 tbsp Palm Sugar
  • 4 cloves Garlic
  • 2 small Shallots
  • 1 tsp Black Pepper
  • 4 large Hard-boiled Eggs
  • 4 cups Cooked Rice

Instructions

  1. 1Prepare the pork: Cut the pork belly into 1-inch cubes. Blanch in boiling water for 5 minutes, then drain.
  2. 2Make the caramel sauce: In a heavy-bottomed pot, melt the palm sugar over medium heat until it caramelizes and turns a deep amber color. Be careful not to burn it.
  3. 3Braise the pork: Add the pork to the pot and stir to coat with the caramel. Add coconut water, fish sauce, garlic, shallots, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until the pork is very tender.
  4. 4Add eggs: Add the hard-boiled eggs to the pot during the last 30 minutes of cooking.
  5. 5Serve: Serve the pork and eggs over cooked rice, spooning the sauce over the top.
