Ingredients

  • 4 medium Ripe bananas
  • 1/2 cup Small tapioca pearls
  • 4 cups Coconut milk
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla extract

Instructions

  1. 1Soak tapioca pearls in water for 30 minutes.
  2. 2Peel and slice bananas into 1/2-inch thick rounds.
  3. 3In a pot, combine coconut milk, sugar, and salt. Bring to a simmer.
  4. 4Add tapioca pearls and cook until translucent, about 10-12 minutes.
  5. 5Add banana slices and cook for 2-3 minutes, or until slightly softened.
