Ingredients

  • 2 large Potatoes
  • 1 cup Chickpea flour (besan)
  • 3/4 cup Water
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Chili powder
  • 1/2 tsp Salt
  • 2 cups Vegetable oil

Instructions

  1. 1Peel the 2 large Potatoes and slice them into 1/4-inch thick rounds.
  2. 2In a medium bowl, whisk together the 1 cup Chickpea flour, 3/4 cup Water, 1/2 tsp Turmeric powder, 1/2 tsp Cumin powder, 1/2 tsp Coriander powder, 1/4 tsp Chili powder, and 1/2 tsp Salt until you have a smooth batter with no lumps.
  3. 3Pour the 2 cups Vegetable oil into a large, heavy-bottomed pot or deep frying pan and heat it over medium-high heat until it reaches 350°F (175°C).
  4. 4Dip each potato slice into the chickpea flour batter, making sure each slice is completely coated.
  5. 5Carefully place the battered potato slices into the hot oil, frying in batches so they do not touch each other. Fry for 3 to 4 minutes on each side, until the fritters are golden brown and crispy.
  6. 6Use a slotted spoon to remove the cooked fritters from the hot oil and place them on a plate lined with paper towels to absorb any extra oil.
  7. 7Serve the Viazi Karai hot.
