Ingredients

  • 4 cups All-purpose flour
  • 1 1/2 cups Dairy-free milk (soy or oat)
  • 2 teaspoons Dry yeast
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 2 cups Sunflower oil (for frying)

Instructions

  1. 1In a large bowl, combine warm dairy-free milk, yeast, and sugar. Let stand for 5 minutes until foamy.
  2. 2Add flour and salt to the yeast mixture. Mix until a soft dough forms.
  3. 3Cover the bowl and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  4. 4Heat sunflower oil in a large pot or deep fryer to 350°F (175°C).
  5. 5Roll or pull off portions of the dough and shape into small rounds or ovals.
  6. 6Carefully drop the dough into the hot oil and fry for 2-3 minutes per side, until golden brown and puffed up.
  7. 7Remove vetkoek from the oil and place on a paper towel-lined plate to drain.
  8. 8Serve warm with your choice of toppings.
