Vegetarian Sinigang with Tamarind Broth and Tofu

Ingredients

  • 1 block Firm Tofu
  • 1 bunch Water Spinach (Kangkong)
  • 6 small Radishes
  • 1 cup Okra
  • 0.5 cup Long Beans
  • 2 medium Tomatoes
  • 1 medium Onion
  • 3 tbsp Tamarind Paste
  • 6 cups Vegetable Broth
  • 2 tbsp Soy Sauce
  • 1 tbsp Fish Sauce
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1Press the firm tofu to remove excess water, then cut into cubes.
  2. 2Sauté onion and tomatoes in a pot until softened.
  3. 3Add the vegetable broth and bring to a boil.
  4. 4Stir in tamarind paste, soy sauce, fish sauce (or vegan substitute), sugar, salt, and pepper.
  5. 5Add the tofu, radishes, okra, and long beans to the pot. Simmer for 10 minutes.
  6. 6Add the water spinach and cook until wilted.
  7. 7Serve hot with steamed rice.
