Ingredients

  • 1 lb Gluten-Free Pasta (e.g., rice or corn-based)
  • 1 cup Broccoli Florets
  • 1 cup Asparagus
  • 1 cup Peas (fresh or frozen)
  • 0.5 cup Carrots
  • 1 medium Zucchini
  • 4 cloves Garlic
  • 4 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 0.25 teaspoon Red Pepper Flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.25 cup Fresh Basil
  • 0.25 cup Parmesan Cheese (optional)

Instructions

  1. 1Fill a large pot with water and bring it to a rolling boil over high heat (approximately 212°F or 100°C). Add the 1 lb of Gluten-Free Pasta to the boiling water and cook for 8-12 minutes, or until the pasta is tender but still firm to the bite. Do not drain the pasta yet.
  2. 2While the pasta cooks, prepare the vegetables. Mince the 4 cloves of Garlic. Trim the woody ends from the 1 cup of Asparagus and cut the spears into 1-inch pieces. Peel the 0.5 cup of Carrots and slice them into thin rounds. Cut the 1 medium Zucchini into 1/2-inch cubes. Roughly chop the 0.25 cup of Fresh Basil.
  3. 3In a 12-inch skillet, heat the 4 tablespoons of Olive Oil over medium heat (approximately 300-350°F or 150-175°C). Add the minced 4 cloves of Garlic and the 0.25 teaspoon of Red Pepper Flakes and cook for 1 minute, stirring constantly, until the garlic is fragrant.
  4. 4Add the 1 cup of Broccoli Florets, the 1 cup of cut Asparagus, the 0.5 cup of sliced Carrots, and the 1 medium Zucchini cubes to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are crisp-tender and slightly softened.
  5. 5Stir in the 1 cup of Peas and continue to cook for another 2 minutes, until the peas are heated through and bright green.
  6. 6Carefully drain the cooked 1 lb of Gluten-Free Pasta and add it directly to the skillet with the cooked vegetables. Pour in the 2 tablespoons of Lemon Juice, sprinkle with the 0.5 teaspoon of Salt, and the 0.25 teaspoon of Black Pepper. Toss everything gently to combine all ingredients thoroughly.
  7. 7Remove the skillet from the heat. Stir in the 0.25 cup of chopped Fresh Basil. If desired, sprinkle with the 0.25 cup of Parmesan Cheese. Serve immediately.
