Ingredients

  • 1 pound Pancit Canton noodles
  • 1 cup Shiitake mushrooms
  • 1 cup Carrots
  • 1 cup Cabbage
  • 1/2 cup Snap peas
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 4 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 1/2 cup Vegetable broth
  • 1/4 teaspoon Ground black pepper

Instructions

  1. 1Bring a large pot of water to a rolling boil. Add the 1 pound Pancit Canton noodles and cook for 3-5 minutes, stirring occasionally, until the noodles are tender but still firm to the bite. Immediately drain the noodles well in a colander and set them aside.
  2. 2Place a large wok or 12-inch skillet over medium heat, which is about 300°F (150°C). Add the 1/2 medium Onion, cut into thin slices, and the 3 cloves Garlic, minced. Sauté for 1-2 minutes, stirring constantly, until the onion looks translucent and the garlic smells fragrant.
  3. 3Add the 1 cup Shiitake mushrooms, sliced 1/4-inch thick, the 1 cup Carrots, cut into thin matchsticks (about 2 inches long), the 1 cup Cabbage, thinly sliced, and the 1/2 cup Snap peas to the wok. Stir-fry for 3-5 minutes over medium heat (300°F/150°C), stirring frequently, until the vegetables are bright in color and slightly tender with a slight crunch.
  4. 4Pour the 4 tablespoons Soy sauce, 2 tablespoons Oyster sauce, 1 teaspoon Sesame oil, and 1/2 cup Vegetable broth into the wok. Stir to combine the liquids with the vegetables and bring to a gentle simmer over medium heat (300°F/150°C), where small bubbles form around the edges of the pan, for 1 minute.
  5. 5Add the cooked 1 pound Pancit Canton noodles to the wok. Using tongs or two spatulas, gently toss the noodles and vegetables for 1-2 minutes over medium heat (300°F/150°C), ensuring all the noodles are evenly coated with the sauce and heated through.
  6. 6Sprinkle the 1/4 teaspoon Ground black pepper over the noodles and vegetables in the wok. Toss one last time to evenly distribute the pepper.
  7. 7Serve the Vegetarian Pancit Canton hot immediately.
