Ingredients

  • 2 cups Butternut squash
  • 1 cup White beans
  • 1 cup Corn kernels
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 2 medium Potatoes
  • 6 cups Vegetable broth
  • 1 each Bay leaf
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Soak the white beans overnight.
  2. 2In a large pot, sauté diced onion and bell pepper until softened.
  3. 3Add diced butternut squash, potatoes, soaked white beans, and corn kernels.
  4. 4Pour in vegetable broth, add bay leaf, smoked paprika, cumin, salt, and pepper.
  5. 5Bring to a boil, then reduce heat and simmer for 1 hour, or until vegetables are tender.
  6. 6Remove bay leaf before serving.
