Vegetarian Dairy-Free Banh Mi Scramble

A deconstructed Banh Mi style scramble using tofu in place of pork. Completely Dairy and Nut Free.

Ingredients

  • 1 lb Extra-firm tofu
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Sugar
  • 1 tsp Sriracha
  • 1/2 cup Carrots
  • 1/4 cup Daikon radish
  • 1/2 cup Cucumber
  • 1/4 cup Cilantro
  • 1 small Baguette
  • 1/4 cup Dairy-free mayonnaise

Instructions

  1. 1Prepare tofu: Crumble tofu and mix with soy sauce, rice vinegar, sugar, and sriracha. Marinate for 10 minutes.
  2. 2Prepare pickled vegetables: Mix carrots and daikon radish with rice vinegar and a pinch of sugar.
  3. 3Cook tofu: Sauté tofu until lightly browned.
  4. 4Assemble: Serve tofu scramble over toasted baguette slices. Top with pickled vegetables, cucumber, cilantro, and dairy-free mayonnaise.
