Ingredients

  • 1 medium, sliced Onion
  • 2 mixed colors, sliced Bell peppers
  • 2 medium, sliced Carrots
  • 1 medium, sliced Zucchini
  • 3 cloves, minced Garlic
  • 1.5 tablespoons Berbere spice blend
  • 3 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions

  1. 1Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. 2Add sliced onion and cook until softened, about 3 minutes.
  3. 3Add sliced bell peppers and carrots. Cook for 5 minutes, stirring occasionally.
  4. 4Add sliced zucchini and minced garlic. Cook for 3 minutes, stirring occasionally.
  5. 5Stir in berbere spice blend, salt, and black pepper. Cook for 2 minutes, stirring constantly, until the vegetables are coated with the spices.
  6. 6Serve hot with injera or rice.
