Ingredients

  • 20 sheets Lumpia wrappers
  • 1 medium Carrot
  • 1/2 medium Cabbage
  • 1 cup Green beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cups Vegetable oil
  • 1/2 cup Sweet chili sauce

Instructions

  1. 1Prepare the vegetables: Finely shred the 1 medium carrot and 1/2 medium cabbage. Chop the 1 cup of green beans into small pieces. Finely chop the 1/2 medium onion. Mince the 2 cloves of garlic.
  2. 2Cook the aromatics: Heat 1 teaspoon of sesame oil in a large skillet over medium heat (350°F/175°C). Add the chopped 1/2 medium onion and minced 2 cloves of garlic. Cook for 3-5 minutes, stirring occasionally, until the onion is softened and translucent and the garlic is fragrant.
  3. 3Cook the vegetables: Add the shredded 1 medium carrot, shredded 1/2 medium cabbage, and chopped 1 cup of green beans to the skillet. Cook for 8-10 minutes, stirring often, until the vegetables are tender-crisp.
  4. 4Season the filling: Stir in the 2 tablespoons of soy sauce and cook for 1 more minute, ensuring the vegetables are evenly coated. Remove the skillet from the heat.
  5. 5Cool the filling: Transfer the vegetable mixture to a bowl and let it cool for at least 10 minutes. This prevents the wrappers from tearing when you fill them.
  6. 6Fill and roll the lumpia: Lay one lumpia wrapper flat. Place about 2 tablespoons of the cooled filling near one corner. Fold the corner over the filling, then fold in the sides, and roll tightly to form a spring roll. Repeat with the remaining wrappers and filling.
  7. 7Fry the lumpia: Heat 2 cups of vegetable oil in a deep fryer or large, heavy-bottomed pot over medium-high heat until it reaches 350°F (175°C). Carefully add 3-4 lumpia at a time, making sure not to overcrowd the pot.
  8. 8Cook until golden brown: Fry the lumpia for 3-5 minutes, turning them occasionally, until they are golden brown and crispy on all sides. Use a slotted spoon to remove them from the hot oil and place them on a plate lined with paper towels to drain excess oil.
  9. 9Serve: Arrange the hot, crispy lumpia on a serving platter. Serve immediately with the 1/2 cup of sweet chili sauce for dipping.
