Ingredients

  • 1 lb Lo Mein noodles
  • 1 cup Broccoli florets
  • 1 cup Carrots, julienned
  • 1 Bell pepper, sliced
  • 1 cup Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, minced
  • 1/2 cup Vegetable broth
  • 3 tbsp Coconut Aminos
  • 1 tbsp Sesame oil
  • 1 tbsp Maple syrup
  • 1 tsp Cornstarch
  • 2 Green onions, chopped

Instructions

  1. 1Fill a large pot with water and bring it to a rolling boil over high heat (approximately 212°F / 100°C). Add the 1 lb of Lo Mein noodles to the boiling water. Cook the noodles for 3-5 minutes, or until they are tender but still have a slight chew. Drain the noodles thoroughly in a colander and set them aside.
  2. 2Place a 12-inch wok or a large skillet over medium-high heat (approximately 325-375°F / 160-190°C). Add the 1 tbsp of sesame oil to the wok and heat it for about 1 minute, until it shimmers slightly. Add the 2 cloves of minced garlic and 1 tsp of minced ginger. Cook, stirring constantly with a spatula or spoon, for about 30 seconds, until they become fragrant.
  3. 3Add the 1 cup of broccoli florets, 1 cup of julienned carrots, 1 sliced bell pepper, and 1 cup of sliced mushrooms to the wok. Stir-fry these vegetables for 5-7 minutes, continuing to stir frequently, until they are tender-crisp and still have a slight bite.
  4. 4In a small bowl, whisk together the 1/2 cup of vegetable broth, 3 tbsp of coconut aminos, 1 tbsp of maple syrup, and 1 tsp of cornstarch until the cornstarch is fully dissolved and there are no lumps. Pour this sauce mixture over the vegetables in the wok. Cook, stirring constantly, for 1-2 minutes, or until the sauce has thickened enough to coat the back of a spoon.
  5. 5Add the cooked 1 lb of Lo Mein noodles to the wok with the vegetables and sauce. Using tongs or two spatulas, toss everything together gently until the noodles are fully coated in the sauce. Continue to cook for another 1-2 minutes, stirring occasionally, to heat the noodles through.
  6. 6Remove the wok from the heat. Sprinkle the 2 chopped green onions over the lo mein. Serve the Vegetable Lo Mein immediately.
